Ingredients

1 large bunch of π’”π’Šπ’π’—π’†π’“π’ƒπ’†π’†π’•

200g feta

200g cottage cheese or ricotta

2 π’†π’ˆπ’ˆπ’”

1/2 bunch π’‘π’‚π’“π’”π’π’†π’š

1/2 bunch π’”π’‘π’“π’Šπ’π’ˆ π’π’π’Šπ’π’π’” (green part only)

Salt and pepper

Zest of 1 π’π’†π’Žπ’π’

2 sheets puff pastry

Method

Finely chop the silverbeet and steam in microwave or on stove until soft. Cool for 15min then squeeze out excess liquid.

In a large bowl combine silverbeet and remaining ingredients (except pastry) and mix well. Β 

Grease a pie dish with butter or olive oil. Line the dish with 1 sheet of pastry.

Spoon in pie filling and spread evenly.

Cover pie with remaining pastry.

Slice a small hole in the pastry to let the steam escape.

Bake at 160deg fan forced for 45min or until pastry is golden and crispy.
