Easy Green Salad
Serves 4
Β 
Salad ingredients
1 cup of cooked brown rice (a quick version is to use the 90sec rice packets)
3 cups of any green veggies - sliced into bite size pieces eg π’ƒπ’“π’π’„π’„π’π’π’Š florets, π’ˆπ’“π’†π’†π’ 𝒃𝒆𝒂𝒏𝒔, π’›π’–π’„π’„π’‰π’Šπ’π’Š, - steamed briefly 1-2min in microwave then refresh under running water
1/2 π’ˆπ’“π’†π’†π’ π’„π’‚π’‘π’”π’Šπ’„π’–π’Ž chopped 1cm squaresΒ 
2tbs sesame seeds
Optional: 1 cup π’”π’‘π’Šπ’π’‚π’„π’‰ leaves or π’Œπ’‚π’π’† leaves roughly chopped (a handy tip is to scrunch the kale up to soften it a little)Β 
Optional: 1 π’ˆπ’“π’‚π’π’π’š π’”π’Žπ’Šπ’•π’‰ 𝒂𝒑𝒑𝒍𝒆 finely slicedΒ 
Mix all ingredients except sesame seeds together in a large bowl

Dressing ingredients
2 tbs fish sauce
2 tbs lime juice
2 tbs soy sauce
1 tbs rice wine vinegar
Option: fresh π’„π’‰π’Šπ’π’π’Š finely diced to taste
Mix all ingredients and drizzle over green salad
Sprinkle over sesame seeds
Eat warm or cold

Variations:
Use tin of lentils or chickpeas instead of brown rice
Add a handful of seeds or nuts for extra crunch
Add a side of chicken or steak for a bigger meal
