Mexican Stuffed Capsicums
Ingredients
3 large πππππππππ - sliced in half lengthways and deseeded
1.5 cups cooked rice or quinoa
1 ππππππ finely diced
1 cup ππππ kernels (fresh is better)
1/2 cup black beans (tinned)
2 tsp cumin
2 tbsp garlic oil or olive oil
Juice of 1 ππππ
2 tsp each of πππππππ, ππππ and πππππππ (fresh or dried)
Salt and pepper
1 cup of tasty cheese grated
Method
Preheat oven to 180deg
Lay capsicums flat on baking tray
In a large bowl mix all other ingredients with half of the cheese.
Using a spoon pack each capsicum full of stuffing
Sprinkle remaining cheese over the top
Bake for 30-40min or until cheese melts and capsicums are tender
Serve with ππππππ π and tortilla chips
Thyme to eat.......enjoy.
