Mexican Stuffed Capsicums

Ingredients
3 large π’„π’‚π’‘π’”π’Šπ’„π’–π’Žπ’” - sliced in half lengthways and deseeded
1.5 cups cooked rice or quinoa
1 π’•π’π’Žπ’‚π’•π’ finely diced
1 cup 𝒄𝒐𝒓𝒏 kernels (fresh is better)
1/2 cup black beans (tinned)
2 tsp cumin
2 tbsp garlic oil or olive oil
Juice of 1 π’π’Šπ’Žπ’†
2 tsp each of π’π’“π’†π’ˆπ’‚π’π’, π’Žπ’Šπ’π’• and π’‘π’‚π’“π’”π’π’†π’š (fresh or dried)
Salt and pepper
1 cup of tasty cheese grated

Method
Preheat oven to 180deg
Lay capsicums flat on baking tray
In a large bowl mix all other ingredients with half of the cheese.
Using a spoon pack each capsicum full of stuffing
Sprinkle remaining cheese over the top
Bake for 30-40min or until cheese melts and capsicums are tender

Serve with 𝒂𝒗𝒐𝒄𝒂𝒅𝒐 and tortilla chips

Thyme to eat.......enjoy.
