Mixed Veg Curry

Ingredients
1 ๐’๐’–๐’„๐’„๐’‰๐’Š๐’๐’Š diced into 2cm cubes
2 large ๐‘ท๐’๐’•๐’‚๐’•๐’๐’†๐’” diced into 2cm cubes
1 medium ๐‘บ๐’˜๐’†๐’†๐’• ๐‘ท๐’๐’•๐’‚๐’•๐’ diced into 2cm cubes
1 head of ๐‘ฉ๐’“๐’๐’„๐’„๐’๐’๐’Š diced into 2-3cm florets
1 tin tomatoes
1 tin chickpeas
2tsp ground cumin
2tsp ground coriander
1tsp ground Garam masala
1tsp Chilli powder
2cm knob of ๐‘ฎ๐’Š๐’๐’ˆ๐’†๐’“ sliced thickly
1 ๐‘น๐’†๐’… ๐‘ช๐’‰๐’Š๐’๐’๐’Š sliced thinly
Olive oil
Salt and pepper

Method
In a large saucepan or wok heat 3 tbsp oil to medium heat.
Add all spices, fresh ginger and chilli.
Cook for 2-3min
Add in tin tomatoes plus one tin of water
Add in potato and sweet potato and mix well
Simmer on low to medium heat until potato almost soft (30-45min)
Add in zucchini and broccoli and cook further 10min until tender
Season with salt and pepper
Serve with plain yoghurt and pita bread or rotiย
