Mixed Veg Curry

Ingredients
1 ๐๐๐๐๐๐๐๐ diced into 2cm cubes
2 large ๐ท๐๐๐๐๐๐๐ diced into 2cm cubes
1 medium ๐บ๐๐๐๐ ๐ท๐๐๐๐๐ diced into 2cm cubes
1 head of ๐ฉ๐๐๐๐๐๐๐ diced into 2-3cm florets
1 tin tomatoes
1 tin chickpeas
2tsp ground cumin
2tsp ground coriander
1tsp ground Garam masala
1tsp Chilli powder
2cm knob of ๐ฎ๐๐๐๐๐ sliced thickly
1 ๐น๐๐
๐ช๐๐๐๐๐ sliced thinly
Olive oil
Salt and pepper
Method
In a large saucepan or wok heat 3 tbsp oil to medium heat.
Add all spices, fresh ginger and chilli.
Cook for 2-3min
Add in tin tomatoes plus one tin of water
Add in potato and sweet potato and mix well
Simmer on low to medium heat until potato almost soft (30-45min)
Add in zucchini and broccoli and cook further 10min until tender
Season with salt and pepper
Serve with plain yoghurt and pita bread or rotiย
