Potato, Tomato and Onion bake (PTO)

Inspired by a Bill Granger recipe with a few tweaks! Credit to Bill.
This is a wonderful side to roast chicken, steak or any roast meat or just on its own!
OR, make it the main event by adding little chipolata sausages or chucks of chorizo or Italian sausage to make it more of a meal or to attract the interest of your favorite carnivore.
Ingredients
1kg potatoes, peeled and cut into wedges (not too big)
4 Tomatoes cut into wedges
1 large red onion, cut into wedges
1 red capsicum, deseeded and cut into chunks (optional)
50 grams – finely grated Parmesan cheese
2 tablespoons olive oil
½ cup chicken stock (or vegetable stock)
3 Tablespoons of fresh Oregano leaves
Method
Toss everything together. Please in a greased baking dish and bake for an hour at 200 degrees Celsius, stirring occasionally to ensure nothing sticks
