Vegetarian Fried Rice
Serves 2
Ingredients
1 cup cooked and cooled rice - leftover from the night before is ideal
2 cups of finely diced vegetables of your choice - we used π’„π’‚π’‘π’”π’Šπ’„π’–π’Ž, π’›π’–π’„π’„π’‰π’Šπ’π’Š, 𝒃𝒆𝒂𝒏𝒔 and 𝒄𝒂𝒓𝒓𝒐𝒕 - why not try π’ƒπ’“π’π’„π’„π’π’π’Š,π’‚π’”π’‘π’‚π’“π’‚π’ˆπ’–π’”, or throw in whatever you need to use up from the fridge crisper
2 tbsp oil
2 tbsp soy sauce
2 tbsp fish sauce
2 tbsp π’Žπ’Šπ’π’• finely chopped
2 tbsp π’„π’π’“π’Šπ’‚π’π’…π’†π’“ finely chopped
4 π’†π’ˆπ’ˆπ’”

Method
Whisk the eggs together in a bowl and season with salt and pepper
In a wok heat the oil on a moderate heat. Pour in eggs and cook for 2-3min per side to create an omelette. Remove from pan and chop into 1cm pieces
Return wok to heat and add veggies and rice for 5min. Add sauces and herbs and mix well. Cook for a further 5min. Serve immediately
