Chicken and Veg Soup
Ingredients
1 bbq chicken
2 𝒄𝒂𝒓𝒓𝒐𝒕𝒔 diced
2 𝒑𝒐𝒕𝒂𝒕𝒐𝒆𝒔 diced
2 bacon rashers diced
1 π’”π’˜π’†π’†π’• 𝒑𝒐𝒕𝒂𝒕𝒐 diced
1 π’›π’–π’„π’„π’‰π’Šπ’π’Š diced
2L chicken stock or water
2tbsp wostershire sauce
1 tbsp balsamic vinegar
2tsp mustard
1/2 bunch π’‘π’‚π’“π’”π’π’†π’š chopped

Method
Strip the chicken meat off the carcass and chop roughly before placing aside
Place the chicken carcass, 1 chopped carrot, 1 chopped potato, 1 bacon rasher, parsley, stock/water in large saucepan
Bring to the boil then turn down to low and simmer at least 2hours- longer is better
After 2hours strain liquid through a fine sieve into another large saucepan. Discard carcass and veg etc
Add the remaining veg and bacon into the strained chicken soup liquid and simmer for another 30-60min.
Add seasoning - vinegar, mustard, sauce and salt to taste
Finally place in cooked chicken pieces and stir through 2-5min until hot.
Serve hot with more fresh parsley and crusty bread
