Strawberry and Almond Cake

4 𝒆𝒈𝒈𝒔
1/2 cup olive oil
1/2 cup 𝒉𝒐𝒏𝒆𝒚 or maple syrup
1/4 cup water
1 tsp vanilla essence
2 cups almond meal
1 cup buckwheat flour
2 tsp Baking powder
1 punnet 𝒔𝒕𝒓𝒂𝒘𝒃𝒆𝒓𝒓𝒊𝒆𝒔 - sliced

Method
Preheat oven to 170deg. Grease and line a 20cm round cake tin.
Place eggs, oil and syrup in a large bowl and beat until well combined. Add remaining ingredients except strawberries and stir gently until combined
Pour cake mix into prepared tin.
Arrange sliced strawberries on top of cake
Bake for 50-60min or until skewer come out clean.
Best eaten on the same day with some fresh cream 😋
