Zucchini and Grain salad
Serves 2
Ingredients
1 ππππππππ sliced thinly - a mandolin is great for this.
1.5 cups cooked quinoa/brown rice or couscous - your choice!
1 bunch πππππππ roughly chopped
1 bunch ππππ roughly chopped
Zest and juice of 1 πππππ
1/2 ππππππππ finely diced
1 tsp ground cumin
1/4 cup pine nuts or slivered almonds
Salt and pepper
2 tbsp Olive oil or garlic oil or chilli oil if you want it spicy!
Optional : 1 ππππππ finely diced
Optional: 1/4 cup sultanas
Optional: 1 clove of ππππππ finely diced
Optional: cook your grain in vegetable or chicken stock for extra flavour
Method
Mix all ingredients together in a large bowl.
Serve warm or cold.
Add cooked chicken breast pieces for a larger meal or tinned chickpeas for a vegetarian option
