1 cup cooked black rice

1/2 bunch of ππππ finely chopped
1 bunch ππππ finely chopped
1/2 ππππππππ diced
200g ππππππ ππππππππ halved
1/2 πππ ππππππππ diced
100g ππππ ππππ finely sliced
2tbsp olive oil
Salt and pepper

Method
Mix all ingredients together in a large bowl.
Add cooked chicken strips or calamari as a protein to make an entire meal.
Dress with mango,chilli, lime dressing (3-4tbsp) or a simple olive oil and lemon vinaigrette.
