Meatballs with Ratatouille
Ingredients
Meatballs
500g mince
2 tbsp bread crumbs
Salt and pepper
1 tbsp dried oregano
Zest of 1 π’π’†π’Žπ’π’
1 π’†π’ˆπ’ˆ

Ratatouille
1 tin chopped tomatoes
1 tin of water or veg stock
1/2 large π’†π’ˆπ’ˆπ’‘π’π’‚π’π’• 2cm dice
1 π’›π’–π’„π’„π’‰π’Šπ’π’Š 2cm dice
1 𝒓𝒆𝒅 π’„π’‚π’‘π’”π’Šπ’„π’–π’Ž 2cm dice
1/2 punnet π’„π’‰π’†π’“π’“π’š π’•π’π’Žπ’‚π’•π’π’†π’”
Salt and pepper
2 tbsp π’‘π’‚π’“π’”π’π’†π’š finely chopped
2 tbsp π’ƒπ’‚π’”π’Šπ’ finely chopped
100 mozzarella cheese (optional)

Method
Meatballs
Mix all ingredients together then roll into 12 golf ball sized balls

Ratatouille
Mix all ingredients together (except cheese and herbs) in large oven tray
Nestle meatballs on top
Bake at 180deg for 45min - add cheese after 30min baking
Sprinkle over fresh herbs to serve
